Grilled Vegetable Gazpacho!
Ingredients:1 large onion peeled 1 red onion peeled 2 zucchini 1 yellow squash 2/3 C olive oil 8 tomatoes - vine ripened 3 cucumbers 6 garlic cloves peeled 1/2 C sour dough or white bread crumbs 1/2 C red wine vinegar 2 C tomato juice Salt and pepper to taste
Directions: -Cut onion into thirds length-wise. Trim ends of zucchini and yellow squash, cut in half length-wise. Brush vegetables with oil and grill, turning occasionally until peppers blister and vegetables are roasted. Set aside to cool. -Peel blistered skin off peppers. Cut in half and de-seed. Cut vegetables and place in food processor. Pulse until coarsely chopped. Chill. -Core tomatoes and cut into small dice. Peel cucumbers and cut into small dice. Mince garlic. -Add tomatoes, cucumbers, garlic and bread crumbs with vegetables. Sit in vinegar and tomato juice. -Gradually add the remaining olive oil, stirring to combine. Refrigerate for 2 to 3 hours. Serves 6.
